The most expensive lie in the wine business is that great white Burgundy lives in Puligny and Meursault. It lives near them — on the same chalk, in the same hands, under the same sky — and most of it does not carry those village names on the label.
Top village Puligny-Montrachet has crossed $200 a bottle at retail. Meursault is north of $150. Premier crus from either commune now routinely list at $300 to $600 on the wine programs of San Francisco's grandes maisons. For the working sommelier — the person who actually pours Burgundy for a living — that math has been broken for years.
So the smart money quietly moved. It moved up the slope, into the Hautes Côtes de Beaune, where the same limestone bench sits 100 meters higher and 200 dollars cheaper. It moved south into the Mâconnais — Saint-Véran, Pouilly-Fuissé, Mâcon-Villages — where biodynamic farmers like Christophe Cordier are now making Chardonnays that Burghound compares to grand cru. It moved into the entry-level Bourgogne Blanc bottlings of estates that, twenty years ago, were producing nothing under premier cru.

White Burgundy is, and has been for two hundred years, the global benchmark for Chardonnay. Every other Chardonnay on earth — Sonoma Coast, Margaret River, Mornington Peninsula — is, on some level, attempting to do what these vines do naturally: ripen on Jurassic limestone, retain acidity, and translate place into a glass without makeup.
If you already love… textured California Chardonnay, austere Chablis, taut Sancerre, or even a focused unoaked Riesling — the four bottles below are the bridge into Burgundy at four very different price points. Yields routinely run 20–30% below appellation maximums, which is the quiet reason her wines drink with such concentration. 100% Chardonnay, fermented in stainless steel to preserve every ounce of Mâconnais limestone.

THE PEDIGREE: Founded in 1980 by Jocelyne and Michel Paquet, today run by their three sons — Jean-Baptiste, Mathieu, and Camille — at the foot of the famous limestone escarpments of Roche de Solutré and Roche de Vergisson. Thirty hectares, fifty parcels, each farmed individually under certified organic and biodynamic practices since 2021. Eight of those hectares sit on Saint-Véran terroir — meaning this Bourgogne Blanc is, in effect, an “assemblage of the leftovers” from some of the Mâconnais's most coveted soils.

THE PEDIGREE: This is the white wine made by a Volnay-and-Meursault domaine. Rossignol-Cornu was born from the marriage of two old Burgundian families — the Rossignols of Volnay (since the 19th century) and the Cornus of Pernand-Vergelesses. Didier Rossignol has run the estate since 1989; his son Julien joined in 2018. Six hectares total, with vineyards in Volnay, Pommard, Pernand-Vergelesses, and Meursault. The Hautes Côtes de Beaune Blanc is a serious wine farmed and vinified by serious people — fermented in French oak with periodic bâtonnage, aged 9 months in barrel (20% new), then 3 more in stainless.

2021 Domaine Cordier Père et Fils Saint-Véran “En Faux”

THE PEDIGREE: If there is a name to know in the Mâconnais right now, it is Christophe Cordier. Thirty-two hectares in the village of Fuissé, spread across more than 100 individual parcels, farmed biodynamically — without tractors, often plowed by horse — with Demeter certification pending for 2024. Cordier vinifies thirty different terroir-driven Chardonnays each year, with average production of just 800 cases per cuvée. Burghound has compared his top bottlings to grand cru. “En Faux” is a 1.5-hectare single-vineyard expression of low-yield, old-vine Saint-Véran fruit, wild-fermented in large wood and moved by gravity.

The rich and very punchy medium-bodied flavors exude a subtle minerality on the markedly lemony, youthfully austere and sneaky long finish. This is very good and worth checking.”
Buyer's Note: Cordier's top cuvées regularly retail for $80–$160 and list at top Bay Area restaurants in the $200+ range. “En Faux” is the single-vineyard wine that most directly captures the domaine's signature at our most accessible price point.

Why Now, And Not Next Month
A genuine, unhyped explanation of supply.
Burgundy is a region of small farmers and finite ground. The 2023 Hautes Côtes de Beaune was a tiny crop. The 2024 Bourgogne Blanc from Famille Paquet was their first fully-certified biodynamic vintage. The 2021 Cordier Saint-Véran “En Faux” was famously short across the entire Côte. Once our last cases of each clear this floor, the next vintage replaces them — different prices, different scores, and in the case of the Cordier, possibly a different style as Demeter certification takes effect.
