The new Pot Still Reserve Cask Strength is a semiannual release built around the distillery's wheated bourbon recipe, bottled at full cask strength rather than the familiar lower-proof format. The mashbill is 65% corn, 20% wheat and 15% malted barley, with the whiskey entered into barrel at a relatively low 115 proof, an important detail that should give the oak plenty of room to develop without overwhelming the softer character of the wheated recipe. Willett plans to release the Cask Strength Pot Still twice each year, around the Spring and Fall Equinox, making this a distinct ongoing expression rather than a one-off curiosity.
